This process is different from the higher temperature cooking methods that many other manufacturers use.  Warm air recycled from other areas of the factory is gently blown over the hand crafted treats for a period of 3 - 7 days. This gradually removes moisture from the skins whilst keeping all the healthy nutrients intact.
